Detailed Commentary
Ibriki, as they go by in one name, are small, tapered and handled pots. They can be used on either gas or electric ranges, over over a small, controlled flame/fire.
FINELY ground and deeply roasted coffee is mixed with water, sugar (if you‘d like), and cardamon (if you‘d like). Teh mixture is stirred, then placed on the flame until it comes to a thick head of foam. It is allowed to come to a boil twice thereafter. Then served. MIddle-Eastern coffee is an experience. One should appreciate th work they must put in to get out good coffee.
