Wow - in 2004 I pulled the trigger spending over $2000 on this machine based on reviews and tech information. It took a like while to get the grind/coffee and tamp down to an art. But now I have hardcore italian foodies / world travellers tell me my espresso is like no other. Short (ristrictto) well balanced sweetness with nice creama. My only issue almost like clockwork every year and half two years I've replaced the cheaper OEM pressurestat. That aside I haven't had a problem.
Obviously run softened water, Pick your favorite bean; grind quite fine similar to salt gains. Tamp well - 30+lbs. lift brew lever part way up - listen for water to fill head, close flushing the water. Wait 2-3 seconds and lift lever again. Nervana!
You won't be disappointed with this machine; especially since ROCKET has installed a commercial pressure stat on its newer models.
I just bought a ROCKET Giottto Evoluzione - for the rotary pump - pour pour - plumb in and of course the new commercial pressure stat. Enjoy!!

Buying Experience
Faema in Toronto Canada. NOT NICE. Terrible customer service, terrible warranty assistance. Yet I still gave them a second chance when I wanted to order my ROCKET Giotto Evoluzione; however yet again they dropped the ball and I went elsewhere.
