I had a chance to visit the Handsome Coffee Roasters location and cafe on Saturday. They'd just opened, but the coffee was great and the location is promising, in the Arts District of LA. They have a simple menu and serve espresso (with or without milk), coffee brewed on Fetcos, and iced coffee. I had a Fisticuffs espresso and a Rwanda drip. There's no condiment bar, they keep the milk behind the counter and don't offer sweeteners. You can read a bit more about my visit on my blog here.

I say the same thing when I see a vegan menu. But sometimes you've just got to stick to your principles. There is room for every coffee niche in L.A. People who are offended will go elsewhere, and the Handsome guys will be fine with that. I think they'll do very well.
EDIT: I remembered the motto of the third wave coffee group, Coffee Common is: "Unique Collaborations. Exceptional Coffee. No Sugar." Coffee Common website here.

"NO COFFEE WITH SUGAR FOR YOU! NEXT!"
"You can write down how to make the perfect cup of coffee. But to make it really good, you have to play something fictional, you have to dress up, you have to think, This is the most important thing."

For certain people, it's not "need" so much as "want" with condiments. For example, while I pretty much always drink my coffee black, I've noticed that adding cream sometimes amps up certain flavors or even, occasionally, reveals previously unnoticed ones.
The only time I ever use sugar in espresso is when I've getting it from those stupid vending machines at French roadside gas stations in the middle of the night . . .
For me, I don't use sugar in espresso. Pretty much, if it needs sugar, I'm dumping it out, not drinking it. But there are certain things I find understandable and certain things I find obnoxious. I can understand not serving a double espresso in a 12-oz. paper cup to avoid someone adding 8-10 ounces of milk. But -- again, for me -- preventing "all ye who enter here" from using sugar seems a bit much . . .

since i dont ever add sugar to my coffee, it doesnt really bother me. it's probably not somewhere i'd take a friend that is picky with their drinks though.
my thing about them is their 4 dollar fetco brewed coffee. if i'm paying 4 bucks before tip, i'd really appreciate someone taking the time to freshly brew me a cup. i'm not driving into a remote part of downtown la to get in and out with my 4 dollar coffee that was brewed who knows when.
