Portland based Stumptown has a couple cafes there.
Doesn't get a lot of press, but an amazing roaster is Herkimer.
My 4 personal recommendations would be Herkimer, Victrola, Stumptown, and Vivace. It's a toss up for vivace or Zoka; I give the nod to Vivace because the espresso is differnt than pretty much anything else out there and it's a go to roaster for a lot of people. I'm in the minority on that one. I wasn't a huge fan of Zoka, but if you're going to go to 5 places might as well add that one to the list.

Strange that even though Seattle is supposed to be the mecca for specialty coffee in North America, we don't seem to get many postings in the US west forums from people based in that area - more California and Arizona I think....

Agreed. You'd think with all the great coffee in portland and seattle, there'd be a greater presence here on CG. I can think of 15 places off the top of my head that serves great coffee here in portland. So maybe there's no need/desire to make your own perhaps?
