The only roaster I know in the Vegas area is actually in Boulder City. It's called Colorado River Coffee Roasters (http://www.crcoffeeroasters.com/) and I know their beans are used at The Beat (downtown Vegas) and Bently's Coffee (drive thru on Charleston and MLK). I'm not a coffee connoisseur but did not like the Latte's that I had at either place. I can't say if that was because of the beans or just the people making the drink, they definitely can't be called Barista's.
I've been making my way around to all the non-chain coffee shops in Vegas (not too many on the list) and by far best Latte that I have had in Las Vegas is at Sunrise Coffee (http://www.sunrisecoffeelv.com/). I still haven't yet made it to Vosges so I can't comment on them yet and I'm also looking forward to trying Espressamente Illy inside of the Palazzo.
I tried Espressamente Illy in the Palazzo.. it was ok, but the layout of their store is incredibly annoying. When i was there, it was very packed and they had a huge square column right in front of the cash register, so in order to get to the other side i had to walk around large groups of people. They also charged me extra just to drink their coffee while inside the store which i thought was ridiculous.

Just made it to Sunrise Coffee this morning. They brew using primarily klatch coffee which I had not had before. I had a cappuccino and it was very good. The atmosphere was splendid. All manner of books to read from How To's to the Hitchhikers Guide to the Galaxy. The staff was very nice and knowledgeable. I left there feeling great, wired, and with a pound of Peruvian gold coffee beans from Klatch. I would reccommend this place to anyone who enjoys good coffee.

So I joined this site just so I could answer your post with my finding, lol. I was searching Vegas for a roaster so I could have a pound delivered to our suite at the Mirage next month. (Oh yes, I'm the dutiful wife that will pack a grinder and coffee pot in the SUV..as we are driving from San Diego.. for my coffee obsessed darling of a husband.) I understand I could ring room service, but it's not the same as waking, grinding, and brewing your own perfect cup (the smell is intoxicating) first thing in the morning instead of getting ready and going out to get some or ordering ok stuff from the kitchen and waiting 20 minutes. I found this site and it looks really promising. They even deliver a pound or over to the Henderson/Las Vegas area. Sweet, right? Here it is:
I hope they are still up and going (which it looks like they are) and I get this post I'm answering is two years old. But maybe this will help someone else looking as I was!
