@Yakster:  The plan is 7 AM-6 PM.  I'm opening, there till... hmm, 2-ish?
@Andre:  Thanks for stopping by today!

This is what we figured out today:
  1.  Chocolate:  75% Cacao.  It's half E. Guittard Grand Cacao (53%) and half E. Guittard Cacao Rouge (unlisted cacao content;  wholesale sheet says it's "unsweetened," so I'll--ugh--assume it's 100% cacao).  Through the magic of math, it's 75%.

  2.  No "Vanilla" latte.  I was against it to begin with ("Hey, isn't the 'plain' latte the 'vanilla' latte?").  Because of the varied coffees we have in the Bar, a trace amount of vanilla could be mistaken as a coffee's terroir.  Too much and it washes over everything else.  We have a mocha as the obvious sweet coffee drink offering, and that's it.

  3.  I was and am still really tempted to nix the macchiato.  It's still there, but I'm as for macchiato's as I am for flavored floss.

  4.  Since I'm dancing around it, below is the menu in progress.

And BTW, four of those are served exclusively ceramic(!!!).
Cheers,

Stopped in this morning and they were pulling Ritual Coffee Roaster's High Striker and Ecco Caffe Espresso.

I tried the High Striker first and a poppy seed muffin and it was very nice, lots of citrus if you like that.  The shop looks nice and there were a few customers there.

Next I tried the Ecco Caffe Espresso blend.  I probably should have started with this one as it's more traditional.  Chris didn't like the first pull so he dumped it and built me a new one.  This is the first time I recall any barista dumping a shot and making me a new one... the one that Chris served me was very nice.  I wish I had a camera with me.  Both double espressos tasted great, but I definitely prefer the High Striker.  What a great way to start a Monday.

Because of their hours, this will be a morning or lunch time spot for coffee for me when I get the chance.  I noticed that they're a couple doors down from Pho Lan, a great Vietnamese restaurant.  I'll have to take the wife for family out for lunch there so I can pop in for a coffee afterwards.

Jeff, the owner, running the cash register, and Chris pulling an espresso with the Ecco Caffe Espresso blend. Nice chocolate and complexity.

Stopped by Red Berry on my way home. At 5:30 it was pretty quiet but the doors were still open. The big white Della Corte is an impressive looking machine. Had a shot of Ritual's High Striker which was fantastic. I'm not a fan of really bright espresso, but this shot was well balanced and pleasant to drink. (The first pull was dumped btw) The medium body faded away quickly and left a great after taste. I enjoyed the aftertaste for the trip up to Barefoot for a bean run.
The shop has a clean layout, simple decor, and nice vibe. Multiple local roasters is a great idea. I wish BB would play along.

Best of luck!

Double Ritual High Striker was pulled as a 2oz espresso, and it was very fruity with nice acidity.
