My friend Molly will be opening soon...I was just there doing some basic training. It's an amazing space! She currently uses B&W roasters. The King Midas espresso I trained them with was actually pretty good.

Chris, Overflow espresso cafe You did a great job! Molly wasn't there yet and one of the Baristas pulled me a double. Very very good! The machine and wands were spotless! The place is comfortable and the help is friendly. Thanks!

The only update I would make is that Kopplins doesn't exclusively use Paradise Roasters coffee (I think Black Sheep might). Andrew has a great skill in finding really great tasting coffee from all over. Try Barefoot Coffees "sweetness". He also has free friday at noon cuppings open tot he public (I haven't gone yet).

I would highly recommend Kopplin's. I have had several great experiences there. On top of having two clovers set at different temps, they have 8 different single origins they brew on the clovers. Also, the third time I went into the shop, the owner recognized me and asked if I would like to try a different espresso! They were pulling three different espressos at the time, I think including 49th parallel and terroir as "guest espressos." He then proceeded to serve my espresso in a port sipper. He said it was an experimental thing, the idea being that you got to drink the espresso at the bottom of the shot that had not been oxygenated. The shop is better than any I have been to, and that includes my recent trip to Europe. (Although I have not been to any other well known "third wave" shops)

Paradise, Black Sheep & Koppins. I was in the twin cities for a SCAA skill building workshop just last month. A roaster from Paradise roasted all the samples for tasting and provided an espresso for the barista class. The espresso was exceptional and the roaster was skilled. The owners of Koppins and Black Sheep were at the workshop as guests and the SCAA volunteers and staff showed them a great deal of respect. I also had an opportunity to work on latte art with Peter the owner of Black Sheep.
I didn't have an opportunity to visit the cafes, but will make the time in May.

So... has anyone found any other great shops for espresso or espresso based drinks in the Twin Cities area besides the aforementioned Kopplins and Black Sheep?
My first hand experience at a variety of other shops (~12 in the core of Mpls/St.P) was mediocre at best. Most were long shots with little attention to watching for simple things like time, blonding, and channeling. Bittery black water.
