Just say "Kaffee". If you order just a cup of "Kaffee" you should get what you want.

The word "Geschmacksprofil" isn't used in Germany. Just ask "wie schmeckt der Espresso?" (how is the taste of the espresso?). But it is better to say what you want, because in specialized cafés you have a lot of choices. "Wenig Säure" means less acidic taste, "Viel Säure" means a lot acidic taste, if you ask "wonach schmeckt der Espresso?" you should get answers like chocolate, nut or whatever it taste like... but to be hones... mostly the German cafés are not ready to answer your questions, unless you enter a specialized café for Espresso. Try the food department of KdW. There you will get answers, even in English ;-)
"To Go" is allready "germanized"... so you can use it even at gas stations ;-)
You better don't ask especially for Milchschaum. It is better to ask for Espresso Macchiato or Latte Macchiato due to the fact, that the meaning and make is clear. There are only a few specialized cafés that know what you are talking aboout. Mostly the waiters are students, and in their eyes Espresso is just a small cup of strong coffee ;-)
