I love Transcend, but admittedly haven't been to Edmonton for awhile so there are likely some other good ones I'm missing. While they have good espresso and fresh, quality beans (I order beans from them weekly), I would almost say their specialty is education. They have tasting parties, blogs, etc attempting to help educate people about good coffee. I'd love to go to one of their tasting parties sometime, but I don't live in Edmonton and haven't ever had the opportunity.

For reference, my favorite drink and that by which I am judging by is cappuccino.
Transcend: Several locations. Serious about espresso with their own line of locally roasted beans. A few tasty and unusual menu items.
Leva: My first experience with good coffee in Edmonton after becoming a snob due to my one month spent in Italy. Great espresso drinks, pizza and other dishes.
Da Capo: Also very good espresso and food. Similar to Leva and not surprisingly as it was founded by previous management for Leva.
Three Bananas Cafe: Also very good caps and they sell Intelligentsia beans.
Italian Center and their associated cafe (3 locations). Good caps, pastry and impossible to not buy groceries while you are there.
There may be some other gems out there but IMO the above list is where I go for good Italian coffee drinks. At the risk of sounding like a snob, other establishments do not know what a good espresso is.
