I believe that Matter of Taste (King St. Kitchener) employees have placed first once and second twice in the Eastern Canada Barista Championships. Personally I prefer brewed coffee and I've been very impressed with their Yirgacheffe. Their beans are roasted elsewhere in the city. The other favourite coffee shop of my wife and I is CafeO on Victoria St.. When you enter this family run shop the first thing you walk by is their coffee roaster. I was impressed already. When we selected brewed over their espresso, we were offered samples of four different single origins. Our server decided our selection was not as fresh as she liked and decided to grind and brew fresh coffee and brought it to our table where we were enjoying our fresh European style pastry (also baked on site, but behind the wall) and reading from a selection of newspapers. I don't think that they have the vast coffee knowledge of Matter of Taste but they are now roasting for the restaurant in the Hilton in Cambridge.

I know that this is an older thread now but another place to check out is "Death Valley's Little Brother" aka DVLB on King St. In Waterloo. An interesting mix of espresso, pour-over coffee and single malt whiskey. They are just a few doors down from McPhail's Cycle Shop.
But I concur with earlier recommendations for A Matter of Taste. A great place.

also check out Cafe Pyrus in kitchener run by Kate a fellow Canadian Barista competitor and judge of several years. The cannon ball espresso she serves is awesome. its also a full vegan cafe as well if your into that kind of thing using local ingredients. She really knows her stuff.

The Hacienda Roasting company, located in the Hacienda Sarria in kitchener, is the roaster for a few shops in town, including Matter of Taste (who owns it btw). I picked up beans from there about 2 weeks ago and they were pretty fresh. Unfortunately they keep what used to be called, banker's hours. Short days and not open weekends. I was hoping to save a few dollars by going to the source, but they charged me the retail price. It was the same price as A Matter of Taste. Since I work close to AMOT, I'll just buy from them next time.
