Hello my Coffee Geek friends. I decided to stay some more time in Toronto area, so I will start roasting coffee. The roasterie will be in Oakville, and I will roast only Brazilian coffees. The main product will be my own farm production, but Brazil has more to offer. I am sourcing the best lots available from the different coffee producing areas. I was there last month for the "Cup of Excellence" finals. I am still preparing the place, making my website, arranging the details. My equipment should arrive in January. I expect to open the doors to the public in February 2011. I hope to host many coffee lovers to talk about coffee production, see a lot of images, and of course, cup the coffees ! I will name the coffee after my family which is in coffee production since 1890. "Carvalho Coffee" Carvalho also means "Oak tree" in Portuguese. Nothing better than being in Oakville ! I am open to suggestions !

Sounds great. Oakville seems to be a gourmet coffee wasteland.
There are lots of fancy looking coffee shops by the waterfront, but they could use some better and fresher coffee. Looking forward to trying your roasts next time I visit!

Hi are you open to roasting coffee from other countries? I am currently importing civet coffee from the Northern Philippines and am looking for a roaster. Prices per kg?

As usual..., I am a bit late. I thought I would open in February, but I was pushed to March. I had to redo all the electricity in the building. Construction should finish this week, and the only thing missing are my chimneys. My container of Brazil coffee arrives next week. I already have the roasters in. I have a Diedrich 12 kg, and a 1 kg for samples and profiling. With this one 1kg I can certainly roast your civet coffee. I am happy to announce that I am finally open and running. The name is Carvalho Coffee. Carvalho is my family name, and also mens "Oak Tree" in portuguese.
The shop and roasterie is at 775 Pacific Road, unit 30, in Oakville. Just get off QEW/403 on Bronte South, 1st left is Wyecroft, and second left is Pacific. We are just behind the Toyota Dealer.
As we just opened we don't have many people walking in, so on Saturdays I am opening only from 10-12. But I live 10 min away, so if any Coffee Geek wants to visit, just give me a shout at my mobile 647-280-4181, and I can go there.
We are roasting coffee from our farm, which is in the border of Minas Gerais and Sao Paulo states, and also from 5 different farms from Tejupa (south of Sao Paulo), Carmo de Minas, Bahia, Espirito Santo, and an Organic from Fazenda Santa Terezinha (but roasterie not certified organic yet).
Open to suggestions of hours of operation, etcetera.

I just noticed this and i will certainly be making a trip to experience your shop as I live nearby.....I feel silly that I did'nt know about it until now!
