Subject: Valentines Day Desserts
 

Mocha Pots de Crème
Simple yet elegant, these delicious Pots de Crème are exceptionally easy to prepare and can be made in advance. Rich and indulgent mocha flavour with a hint of liqueur, these sophisticated desserts are the perfect way to round off a romantic Valentines meal.

Ingredients
340g good quality dark chocolate (minimum 70% cocoa solids), finely chopped
4 large free-range eggs, at room temperature
2 tsp brandy, Grand Marnier or preferred liqueur (use vanilla extract for an alcohol free alternative)
1 pinch salt
240ml freshly brewed strong coffee
200ml double cream, whipped – to serve
Chocolate hearts to garnish

Method
  1. Add the chocolate, eggs, liqueur (or vanilla) and salt into the jug of your kitchen blender and switch on. Whilst the mixture is blending, remove the circular disc from the lid of the blender jug and slowly pour in the HOT coffee. The coffee must be freshly brewed to ensure correct consistency of the crème.
  2. Blend for approximately a minute until the mixture is smooth and chocolate has been completely blended with no visible pieces of chocolate remaining.
  3. Take two serving glasses and pour the mixture into each, leaving plenty of room to add whipped cream later.
  4. Place in the fridge for a minimum of 3 hours to allow the crème to set.
  5. Garnish with the whipped cream and chocolate hearts (or chocolate shavings if you prefer) and serve.
