Subject: Coffee & Raisin Cake
 

A recipe everyone will love. Delicious moist coffee flavoured cake with plump raisins and cinnamon.

Ingredients
475ml freshly brewed strong black coffee
145g raisins
375g plain flour
110g butter
1 tsp ground cinnamon
1 tsp allspice
2 tsp bicarbonate of soda
1 tsp baking powder


Method
  1. Begin by preheating the oven to 180C
  2. Grease and flour 20cmx30xm cake tin
  3. Into a bowl sieve the flour, baking powder and bicarbonate of soda together and set the bowl aside for later
  4. Add the coffee, butter, raisins, sugar, cinnamon and allspice into a large saucepan and bring to the boil
  5. Once boiling, remove the pan from the heat and leave to cool to room temperature
  6. Once cooled stir in the flour, baking powder and bicarbonate of soda mix until well combined
  7. Pour the mixture into the cake tin and bake in the oven for 45 minutes or until a skewer inserted into the centre of the cake comes out clean

Thanks for sharing this recipe, I have a few I've kept in a "safe" lol well you know how chefs are with their own recipes...
But this sounds amazing, I can't wait to try it! I actually found a recipe for bread pudding using donuts and coffee. I'll have to look at where I stored it, can't seem to find it but I haven't made that yet it will go on my to-do list lol

That sounds delicious, right up my street! Please let me know how it goes and if you're willing to share the recipe, I'd love to give it a try. I also have a recipe for coffee bread & butter pudding which I'm hoping to try this week.

This recipe is extremely similar to the one I use for my 'Coffee & Walnut' cake... Obviously swapping out the raisins for walnuts. I'll give the raisins a go - thanks of sharing rijo :)
