Packed with rich intense flavours and contrasting textures, these delicious ice cream sundaes are a coffee lovers idea of heaven. These divine coffee infused desserts are perfect for serving at dinner parties or rounding off Sunday lunch, as they're so quick and simple to make.
Ingredients – Makes 4 500ml espresso ice cream 125ml fresh double cream 4 tbsp Kahlua 8 double chocolate chip cookies ½ tsp vanilla extract ½ tsp icing sugar 12 chocolate covered coffee beans – to garnish
Allow the ice cream to soften slightly by removing from the freezer and leaving at room temperature.
Pour the double cream into a mixing bow and add vanilla extract and icing sugar. Using an electric hand mixer, whisk to soft peaks.
Take 4 sundae glasses and add a scoop of ice cream to each.
Using your hands crumble half a cookie into each sundae glass.
Add another scoop of ice cream and crumble over another cookie half.
Drizzle a teaspoon of Kahlua into each sundae and crumble over more cookie crumbs.
Top with whipped cream and garnish with the chocolate coffee beans and remaining cookie crumbs.
