Posted Thu Aug 29, 2013, 3:33am Subject: Americano Figs with Vanilla Mascarpone
This is a great recipe for those times when you fancy something a little different. Americano coffee enhances the delicate flavour of the figs and the vanilla mascarpone provides a decadent dimension to the dessert.
Ingredients – Serves 4
Americano Figs 1400ml freshly brewed strong black coffee 6 figs 200ml coffee liqueur such as Kahlua 200g brown sugar 2 tsp rice flour
Vanilla Mascarpone 2 tsp vanilla essence 250g mascarpone 2 tbsp icing sugar 200ml double cream, whipped to soft peaks
Add the coffee, Kahlua and sugar to a saucepan and place on a high heat. Bring to the boil then reduce heat, add figs and simmer for 2-3 minutes or until the figs become tender.
Remove the figs from the saucepan and leave aside to cool.
Once the figs have cooled cut into halves
Add the rice flour to the saucepan of coffee mixture, stir thoroughly and place to one side to cool
To make the mascarpone cream, add the mascarpone to a mixing bowl and gently fold in the vanilla essence, icing sugar and whipped cream
Using a chefs’ ring or smooth edge of a pastry cutter, spoon half of the mascarpone into the ring then carefully lift the ring away. Repeat this process onto the three remaining serving plates. Place three fig halves on to each place and drizzle over coffee sauce
