Subject: Simple Tiramisu
 

Ingredients - serves 6-8
4tbsp Tia Maria, brandy or Marsala
150ml espresso - cooled
2 eggs, separated
3 tbsp caster sugar
250g mascarpone cheese
150ml double cream
Grated dark chocolate or cocoa powder for dusting
3/4-1 packet of Savoiardi biscuits

Method
Beat together the egg yolks and caster sugar until thick and pale using an electric hand whisk. Beat the mascarpone cheese until it is smooth. In a separate bowl, whisk the cream then fold into the mascarpone mixture. Whisk the egg whites until they form soft peaks. Using a metal spoon, gently fold into the creamy mascarpone mixture.
Pour the espresso and chosen liqueur into a bowl. Submerge each biscuit into the coffee liqueur for a few seconds, to soak up some of the liquid.
Line the bases of 6-8 glasses with the soaked biscuits.
Cover with a layer of creamy mascarpone. Repeat the process by adding another layer of biscuits topped with another layer of the mascarpone mixture. Top with grated chocolate or dust with cocoa powder. Keep in the refrigerator for at least 2 hours before serving.
