As the weather has finally decided to pick up in the UK, it's started me thinking of the inevitable BBQ's which will ensue. We don't get a prolonged summer here as a rule, therefore as soon as the sun comes out we tend to make the most of it by squeezing in as many BBQ's as possible. I always like to offer guests unique refreshments in addition to more traditional drinks at any outdoor event and coffee cocktails usually feature high on my list. I thought I'd share a few of my favourites.

Today's recipe is Amaretto Iced Coffee, a indulgently creamy iced drink entwined with the perfect combination of coffee and Amaretto liqueur. Delicious, unique and so simple to make.

Ingredients serves 6
750ml Americano coffee cooled
450ml Vanilla ice cream
250ml milk
60ml Amaretto liqueur such as Disaronno
2tsp Vanilla extract
1tsp Almond extract
Crushed ice
Whipped Cream
Chocolate sauce to top

Method
  1. Place all ingredients excluding the ice into a blender and whip until a smooth milkshake consistency is achieved
  2. Fill serving glasses half full with crushed ice and pour in coffee mixture
  3. Top with whipped cream and chocolate sauce
  4. Enjoy

Sounds like worth giving it a try.

Here are some other summer recipes:

Coffee on the Beach:
Mix a cold, sweetened doppio with cocoa. Add vanilla ice cream and pineapple juice, and stir until creamy.

Mint Mix:
Blend some cream, espresso, peppermint ice cream and sugar.
