Chocolate, coffee and brandy, what's not to like?
Ingredients 3 large free-range eggs - separated into yolks and whites 175g/6oz good quality dark chocolate with a minimum of 70% cocoa solids - chopped 110g/4oz unsalted butter - cubed 2 tablespoons freshly brewed espresso 2 tablespoons brandy
Method
Add the chopped chocolate into a heatproof bowl and place over a pan of simmering water
Once the chocolate has melted, remove from the heat and add the butter stirring until that has also melted
Add in the egg yolks one at a time stirring constantly
Add the espresso and brandy and stir
In a separate bowl, whisk the egg whites to soft peaks
Fold the egg whites into the chocolate mixture
Pour the mixture into cups or ramekin dishes and place in the fridge until ready to serve
