Subject: Cardamom Sugar Cookies
 

From Corby Kummer's book "Joy of Coffee" (which I highly recommend):

3 3/4 c. all purpose flour
2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cardamom (use the rest in a pot of coffee, mmm)
1 c. butter, softened
1 c. sugar
1/2 c. packed brown sugar
1/4 c. honey
1 large egg
2 tsp. vanilla extract
1 Tbsp. grated orange zest

  1. Sift together flour, baking soda, salt & cardamom in a medium bowl. Set aside.
  2. In a large bowl, cream together the butter and sugars until well blended. Blend in the honey.
  3. Add the egg, vanilla and orange zest and blend for 1 minute.
  4. Add the flour mixture and mix well for 1 minute.
  5. Divide the dough into 3 portions and form into flat disks about 3/4 inch thick. Wrap in plastic & refridgerate at least 3 hours or overnight.
  6. Preheat over to 350F, with a rack in the middle. Lightly grease baking sheets or line with parchment paper.
  7. Remove disks from refrigerator. Roll out dough on a a lightly floured surface until 1/8 inch thick. Cut into desired shapes and place 1 inch apart on baking sheet.
  8. Bake 1 sheet at a time for 10 - 12 minutes until cookies are fim and light gold around the edges. Remove cookies from pan immediately and let cool on a wire rack. Store in an air-tight container for up to 2 weeks or freeze for 9 months.


Don't mind the peanut butter cookies in the background, 3 of my family members are gluten-free.
