In addition to coffee, I'm a fan of craft beer, and a less-knowledgeable fan of wine. Wine is a staple for cooking. Cooking with beer is a bit less common. What about cooking with coffee? Of course there are plenty of coffee desserts. But what about cooking savory dishes with coffee? I recall there was an episode of Iron Chef America where coffee was the secret ingredient, but I no longer recall what the more interesting dishes were. Off the top of my head, I can think of a few applications where coffee would be good: stew, chili, maybe a roast. (I'm cooking a roast with wine today--that's part of what prompted my question.)
Has anyone here cooked with coffee much? Any recipes you care to share?
The best beef Chili i have ever made used coffee, dark chocolate and Jalapenos. I will see if I can dig out the recipe. Coffee definitely pairs well with beef.
I've grilled steak with ground coffee as a sort of rub, which was pretty good. Made the mandatory Coffee Ice Cream (using chilled extract from Aeropress), but that's about it.
Makes me think I should try smoking some chicken with a coffee injection instead of beer. I think maybe lamb would be a good candidate for coffee, some how, maybe with some cardamon.
The remnants of my pot of drip coffee always make their way into my spaghetti sauces. I use espresso powder along with cocoa, chipotle, salt, white pepper, and sugar for a great rub on pork or chicken. I have a Southwestern rub for fish that has a bit of coffee in it (see attached photo). There are a number of stew recipes in which I use coffee during the colder months. Coffee bean encrusted lamb chops ... and many more.
Oh, and just about every vegetable from my garden grows in coffee compost. Does that count? ;)
