Welcome to the CoffeeGeek forums!

The first thing that comes to mind about the wateriness is to add a thickener - Xanthan gum? Click Here (www.healthsystem.virginia.edu)

Remember that FrappuccinoŽ is a trademark of Starbucks - and their big bad lawyers love to crush local coffeeshops!

If you are looking for baristas, you might post in the regional forum instead: http://coffeegeek.com/forums/worldregional/australasia

Try this:
Keep the milk in a freezer until it's getting a little slushy.

Use a blender and start with at least 5-6 pumps of syrup from a dispenser (chocolate or white chocolate).  Then add 1/2 ice and 1/2 milk to make 16 ounces, and toss in a couple of espresso shots.  Blend until smooth.....add milk if it's too thick.

Of course, if your drinks are too bitter without adding a load of sugar then you have other issues that can be solved by brewing properly (i.e. use good beans at correct temperatures with good packing technique).

Sorry to say it, but if you think you are doing a good job with espresso and cappucino but they are both too bitter without adding loads of sugar then there is lots of room for improvement.  Fortunately, there is also lots of information and help available in these forums!

Welcome to coffeegeek  :-)
