Subject: Spanish Coffee (the cocktail)
 

Portland is unusually cold this week. So, I modified a Spanish Coffee recipe off of bartender.com, for folks with espresso equipment.

ingredients:
1/4 oz Bacardi 151
1 oz brandy
3/4 oz kahlua
1/4 oz tia maria
2-3 oz whipping cream (light or heavy)
sugar
orange wedge (or lemon)

steps:
1) add hot water to 6-7 oz irish coffee glass (needs to be heat-proof, esp the rim)
2) pour brandy, kahlua and tia maria into steaming pitcher
3) pull a single shot of espresso into demitasse cup or shot glass
4) empty irish coffee glass, run an orange wedge around rim of glass to coat, then dip in sugar
5) add Bacardi 151 to glass, ignite, and tip glass on side, turning glass until sugar around entire rim has caramelized or at least hardened
6) pour espresso into glass to extinguish flame
7) steam the liquors until warm, add to glass
8) rinse pitcher in cold water (mostly to cool it)
9) add cream to pitcher, steam until warm/hot; try to avoid big bubbles
10) pour slowly into glass so a little remains on top (most will incorporate into the drink)
11) add sprinkle of cinnamon on top, maybe squeeze a drop or two of orange juice from wedge

It's keeping us warm, anyway. Comments/suggestions welcome.

we have a spanish restaurant in town that makes a killer drink much like you describe.   Hell on the steam wand, but tasty

sounds like a great drink!!
