I believe that an iced coffee should be just that. I take my best coffee and chill it in the refrigerator. I add ice 1/2 and 1/2 and a flavor, if that is what the customer wants. It is delicious. It is also another way to use left over coffee the next day. There is no waist.
If you use espresso, it is not an iced coffee, it is and iced latte or something else.

I did a whole write up on consistently making awesome iced coffee. No creamers or sugar, just straight up iced coffee. The tasty fruity nuances make it so that it doesn't need any additives to it! Check out the article I wrote and let me know what you think of the recipe.
Basically, it's coffee brewed with a V-60 Pour Over onto ice. The ice homogenizes with the hot coffee (obviously the hot coffee melts the ice) then its served over a glass of ice. I messed with different measurements and came up with what I believe is awesome tasting iced coffee. Again, check it out and let me know what you think!

I also steam my milk a little to help break it down. It just seems to me that when you use straight milk, it hides the flavorings of the coffee that you are using. I don't steam it very hot, just enough to introduce some air.
