Good points and stuff to learn on, but the main puzzle for me is the temp i get out of the machine, which has always seemed too low. What i cant understand is how Gaggia/Phillips can say 73-83 degrees C is appropriate temp range for the product, when I see US standards and gaggia branded web site refer to 90-96dC!
What seems to be the feedback from this site is that to have to know how to push and adapt this consumer level of machine to get something decent out of them....would agree?

Temperatures will vary with the method of measuring. I am not sure how Gaggia determines the temperature. Most espresso is hit with about 200F water at the puck to get the taste in the cup. If one just measures in the cup, then the temperature is considerably less. A lot of heat is lost in the fall through air. I would try for about 200f in a styrofoam cup with every thing preheated and the cup cut and fitted to the group.
I also leave my machine on idle for about 20+ minutes before use to temperature stabilize the whole machine.
200F done as above will get you close, and then adjust for taste in the cup.
Far more than turning on the machine, waiting a few minutes and pulling the shot. You can also check boiler temperature and learn the offset to brew water and adjust with surfing, or a PID eventually.
For me, the thermostat or PID is about idle temperature, to get close. The brew temperature takes adjustment, surfing, flush, PID.... The journey begins.
