There's been a lot of talk here about how coffee isn't considered with due respect in the culinary world; how ordering espresso at a restaurant is a known letdown.  On other forums I frequent we have similar threads, so I thought it'd be good for us as coffee geeks to show our culinary understanding as well.  So let's see (or read about) your latest creations :-)

Haven't cooked much pizza lately because of the heat but I made some pie this weekend.  I usually do a 48hour cold rise on my dough but lately I've been playing around by doing a starter the night before then a 5 hour room temp rise day of.  I adapted it from a baguette recipe I use.  But here's the results.

This is a sweet pepper, mushroom, onion, kale, tomato; all of which we got from the local farmer's market:

On my deck I have a 35,000 BTU burner and an 18 inch cast iron wok. The burner is hooked up to my natural gas line, for a never ending supply of high heat. (for some definition of "never")

My wife loves my Refrigerator Fried-Rice, which, as you can guess, changes every time. But, damn it's fun to cook on that thing!

Well then, you should see me without coffee.

Heck, I'll play along...

The other night I made pan seared duck breasts, which I served with MY orange sauce I adopted from several different recipes.  It ends in a flambe of cognac added to pan drippings, which is then added to the orange sauce base that's been simmering off to the side.  The side dish I prepared was truffled twice baked Yukon Gold potatoes.  Bake the potatoes, then after they cool enough to handle, remove one end, carefully scoop out the insides, mix well into a puree with truffled olive oil, then put it all back inside the potato shells and bake another half hour.  I served salad and a nice bottle of red wine - a  Chateauneuf-du-Pape works well, but I had a tempranillo at hand that I selected (Tinto Pesquera).

Pied du Cochon braised with a mustard sauce then dredged in bread crumbs and quickly sauteed to crisp and served with a pan reduction sauce of the braising liquid. Wilted kale with a persimmon vinaigarette. Roasted pears with honey and black pepper.
