Subject: Kopplin’s Coffee in St. Paul MN
 

Stopped into Kopplin's Coffee in St. Paul today for the first time.  It was a neat place.  I had a couple shots of Espresso Vivace Dolce and my wife had a cappuccino that came with some great latte art.  She said the cappuccino was better than the ones I make her at home.  (I am crushed) My espresso was pulled as a ristretto and was very good.  

What impressed me the most was the barista.  I didn't get her name but she was the best I have seen in my limited experience.  Kept the equipment very clean, warmed the cup, tamped carefully and did all the things you expect.  In addition, before grinding the beans for each of my shots, she ground some beans and threw them out to make sure there were no stale beans left in the doser.  Also, one of my shots was not to her liking (I think it was a little long) so she threw it out and started over.  How many shops would just serve it?  Too many.

Also had my first Clover coffee and it was great!

I am looking forward to football season, as I will get to stop into Kopplin's on the way to the train station.  It has been 9 months since I was there last.
