Subject: [[sold]] Apothecary-style Cona with Gas Burner
 

For sale is a two- or three-person Cona with a nice gas burner and two-part filter that accepts metal, cloth, or easy-to-find (and -use) paper Melitta percolator filters.

It's in good working order but isn't a museum piece: the black paint has flecked off the wood towards the bottom, and the silvery part of the stand has some grime that I wasn't able to sponge off.

Recipe: I like to use 500 mL of water and 33 grams of medium-coarse coffee (it can accept up to 600 mL of water, but careful with the bloom). When the water in the lower globe is around 200, or when it shows bubbles the size of small grapes, seal the unit and the let the water rise into the upper chamber. It should be at 195-196. Add coffee and gently stir to incorporate. Gently dunk the crust when it forms--I'll do this twice; halfway through infusion and right after I kill the heat. Let the coffee infuse for 2.5 minutes after you've added it to the water, then kill the heat. The draw-down should be pretty quick. Swirl and serve, making sure to let it cool down before enjoying. The wait is worth it.

Cup character: Less body than drip but very aromatic and crisp. Especially good with floral coffees like washed Ethiopians.
