I wanted to end this thread with a huge thank you to Tony for being awesome, and spending over an hour going over the machine, the history and maintenance, flushing cycle and so on. Buying locally from an experienced fellow geek has worked out really well for me.

It's been exactly 2 weeks  since I bought the machine, it's taken me this long to get it dialed in just right. In my defense, I've been changing one variable a day for my weekly morning cup before work and haven't had a dedicated session to experiment until the weekends.

As Tony was kind enough to include a naked portafilter, I've been able to diagnose my shots based on Dan Kehn's awesome 'Perfecting the Naked Extraction' article over at HB. In my case adjusting the grind settings on my Baratza Vario and the Weiss Distribution Technique allow me consistently pull ~24/30g of espresso from a 18g dose in ~24 seconds. Delicious :)

I  love my Royal Grimac La Valentina - I think I've managed to strike gold with this one, and don't think I'm going to feel the need to upgrade for a very long time.
