Why not, I'll +1 the Pharos too!
Let me note that my Pharos is super aggressive. I can sometimes grind 15g in 12 turns! Now, the less turns means the harder it is to hold the grinder and turn the handle. Usually, it is 19 turns so I am grinding in much less than 30 seconds. But, you have to factor in time to remove the grounds (whack whack whack) etc. I love hand grinding and am not going back to electric. YMMV
Also, the Pharos shot quality is exponentially greater than my older NS Grinta. The Grinta had 50mm flat burrs (like a Rocky) but had excellent reviews. It was good, better than my Encore, but not mind blowing. The Pharos was mind blowing.
The Pharos is hand-built, one at a time, by Doug and Barb at Orphan Espresso. When they run out of parts to build the Pharos, they remove them from the website. Sometimes this lasts for a few weeks, sometimes longer. From my understanding, the delays are on the manufacturers end (ie the people who make the parts for OE). If you are serious about ordering one, contact OE through their website to get a more accurate ETA.
I think it is worth the wait, IMO. I was too impatient and bought a Grinta. Ended up selling the Grinta after one week of finding a used Pharos. Of couse, YMMV
