Is the volume for a double shot approximately 2 ounces? I thought that was the case, however, my reason for asking relates to seeing roasters list recommendations for their beans. For example, a roaster may suggest a dose of 18-19 g, an extraction time of 24-27 seconds, and an output volume of 24-28 g. Yet, 2 ounces of water, for example, should weigh approximately 59 g. I realize the espresso will likely be less as its composition includes gas (and not all water), however, 24-28 g for an output volume seems like it is not much more than an ounce.
Well, lots of water is absorbed in the puck. For now, why not try 30-35 grams. If the shots are too dense, slightly loosen the grind, and let the shot 3/4 fill your 2 oz espresso cup. If that transpires in 25 seconds (counting pre-infusion) taste and see where you are. Start counting from when you first start the process, not when you see the first drops.
There are no rules. These days, lots of folks are going 18-19 grams coffee, and stopping shots at 23 grams. This shots are too "salty" for my taste. Today, by accident on my Strega, I had a shot go to 2 oz..about 56 grams! It was delicious. Jim Schulman has mentioned some coffees really do well with a longer pull, but at a moderate flow rate…a nice thin but steady mouse tail. Let your taste buds decide what works for you. Remember, each coffee, whether SO or blend will need it's own bit of trickery. Not all coffees are the same!! Do make sure you're using 6-14 day old fresh coffee, freshly ground.

This is the best answer but the one no one likes to hear.
It's what tastes good. I pull shots that dont blonde until about 45 seconds and weigh 15g, using 18g of coffee. Tastes delicious. ha. But according to the book, it should taste awful. Just make sure you swirl the cup before you sip so you get even sips. Otherwise the first one could be a doozy ha.
