I am sure that the answer to this question is 'It depends on various factors'.
But I was wondering if there is some rule of thumb for this. I have heard that red bird peaks after a week. I have noticed this to be true from my own experience. I am looking to try new blends, but I do not want to use them to early or wait to long. Or does one judge the peak for flavor. Or do you just need to do some research about the blend and experiment?

I don't have much practical experience, but I've read that if you try to grind beans for an Aeropress (using much coarser than espresso grind, naturally) and it blooms quite excessively, then it hasn't finished degassing. This was in relation to 2-day-old coffee beans from date of roast.
But my question then is, if I let it peak at a week, then do I only have 8 days to use it all up, going by "roast date plus 15 days = end of freshness"?
