Grinding greatly expands the surface area and the beans "age" quickly, use in 15 minutes. You notice the aroma, the volatiles. The point is to start with beans roasted within about 1 week to 15 days, not old to start with. See "rules of 15." I was typing while the above was posted :)
Double vs double crema is non-pressurized vs pressurized. Non-pressurized requires fresh, freshly ground beans and an adjustable espresso grind.

Just to build on what Fred (D4F) said. The only way to get fresh coffee beans is to buy from a local roaster or to order over the internet from a quality roaster that ships the same or next day from roasting. Stores do not have fresh coffee. If you read the bag, there is one of 3 things on the bag.
1 There is a BEST BY date printed on the bag. This is not a good thing. The date can be anything from 6 months to a year and a half! from the day the beans were roasted, no telling how long the date is from roast, you need to know each roaster and how long they date the bag to, they do not provide this information, avoid buying a bag with a BEST BY date.
2 There is NO DATE on the bag. See item 1
3 There is a clear ROASTED ON date, this is a number you can work with, add 14 days to the printed date and if you are in that window, you are OK but remember they still age, plan to use them all by the end of the window. Example, if there are 3 days left in the 2 week window, plan to use the bag in the next 3 days or take measures to freeze properly (a whole 'nuther subject)
Fresh coffee from quality roasters costs more than supermarket prices. I have heard people moan about the price of coffee at about $2 a pound. Be prepared to spend for fresh coffee, starting at about $10 for 12 OUNCES, the price can go way up from there.
Quality roasters use the BEST beans, mass market roasters use the cheepest thing they can get their hands on, there is a huge difference in quality, HUGE.
Check out our starting point for roasters, just because someone is local to you, that does not mean that they are quality, they are just close. We have used product from roasters on this list and can say that when we bought from them, the quality was good. Things sometimes change and I have helped to remove a few now, sub par roasters from the list.
