Thanks for all your replies. Note to noobies - practice for a week before you get carried away with questions like me. Emradguy, you are so right about the beans. And having read Frcn's guide again I now heed the advice about fresh roasted beans! I know it's all about the beans and the grind but had no idea how much. Yesterday I got 4 day old beans and the shot I pulled was beautiful. Not been able to recreate it since though. So many variables to play with. Emradguy, I'm using an unpressurised basket. I have both the original 2 spout portafilter (nothing to remove on that one. It's moulded that way) and also a naked one. Mainly using the naked one. Big break through on the latte art. Wasn't pouring enough with the wiggle. More flow and its working nicely. Anyway, think I have enough to keep me busy for the next few months. Just wish my body could handle the amount of caffeine I need to in order to practice more! Oh yea, I'm weighing the dose using scales and measuring 2oz including crema. Will play around more now I know what I'm looking for though. Thanks again.
