I know it's a short shot of espresso of some sort but I can't find any written consensus on how it's made and how much liquid it should be and what it's characteristics are, so what I want to know is what is it exactly, how is it made and what makes a good one?

Seems, you posted this question several times.
The Italian word ristretto means "restricted". A single or double ristretto is brewed with the same amount of ground coffee as a single or double shot of espresso. However, by adjusting the fineness of grounds accordingly only 15 ml (0,5 oz) or 30 ml (1 oz) are extracted in about 25 seconds, resulting in a concentrated, strong coffee.
