It is also interesting that when reporting cupping (or just tasting) results, the results usually include remarks about how the coffee, including espresso tastes as it cools. It's often an indication if how good the coffee is if it has some good flavor as it cools.

I think the cup warming for the tasting process isn't about keeping the espresso from getting cool or cold its about keeping it from getting tepid. Cups that havent been warmed properly will leech heat away from the espresso until it is the same temp as the cup(i.e. room temp). Iced/cold espresso is fine I think. However luke warm espresso that is neither hot or cold is gross IMO.

I dont like iced coffee but this really works for my wife and son. In those 16oz disposable cups with lids you get at smart and final just extend your espresso making a little and make 8 extra shots. Put two in each thus making four cups with two shots each. Put a lid on them and put in fridge,later that day when someone wants an iced coffee add four five pumps from the Torani bottle and ice and milk. You will be surprised just how good and iced carmel flavored coffee is.
