Here are some things that Iíve noticed about my preferences. If you can make recommendations based on these, please do.
Espresso tastes better after sitting a while. I prefer it with milk, warm rather than hot. I usually run enough water to turn off the ready light, wait for the light to start run. My better pulls take 16-24 seconds. My favorite beans are Espresso Monkey Blend from sweet maria's (I've tried all of their blends). I roast to FC+ or Vienna. Also, Red Bird Esp.
Background stuff: Equipment listed at left. I makes doubles w/ an open portafilter and everything looks standard.
Making espresso is not rocket science. Rockets fail less often.

16 seconds would be way too underextracted imo, why such a large variance? I generally aim for 1.75-2oz in 25-30 seconds timed from first drip. You could try something like that, or time from when pump is turned on but try to aim for at least the 24 second range you get sometimes.
Sounds like you are not a fan of bitter or acidic coffee even though it sounds like you are pulling sour shots. I've noticed some espresso I pull has a sweet honey like taste as it gets close to room temp but I don't like it enough to do it on purpose. I'd try pulling slower shots and compare right after pulling and see what you like.
