I have a basic question. I am pulling my shots into shot glasses with graduated lines measuring fluid ounces on the side of the glass. When determining the volume of the shots I am pulling should I use the level of the liquid in the shot or the level of the crema? I am getting as much crema as liquid in my shots and am wondering if I should adjust my grind for 1.5 -2 fl ozs of liquid in approx. 25 seconds or 1.5 - 2 fl ozs of liquid + crema in approx. 25 seconds.

To answer the question, I think you should go by weight - this will be more consistent, particularly between different ages of coffees that will produce more or less crema. But taste is more important than either volume or weight.

Interesting. Thanks for the suggestion. What weight should I shoot for per double shot 25 second pull? I start with 16g of coffee if that makes a difference.

Thanks for those links! Those two guys (Andy and Jim) sure know what they're talking about. I actually saved both of their posts for future reference. Jim's post especially is going to help me improve my shots from here on out. This is just the tweak I've needed to improve, and it'll help me way more than a better grinder would.

John, Thanks for the links. That first link is a real eye opener! After pouring over (pun intended) 11 pages of discussion about brew ratio I realize I needed that information and background far more than a simple answer to my question. Being an engineer I love all the geeky stuff surrounding espresso and you have given me another parameter to play with while playing with my equipment, I mean pulling my shots. :)
