From what I can tell, there isn't any gushing. Although I probably should have stopped the shot when the stream got wobbly (or before). I think I like Toscano more as a ristretto. Also, I don't stir my espresso. I kind of like tasting the various layers, but I know many who would disagree.
I'll probably send my portafilter out to Verna Design sometime this week. My local machine shop wanted to charge $65, and other shops around the area only seem to respond to large-scale orders.
Very interesting. I'm new to ALL of this, so in watching the 2 videos, I couldn't really tell what the difference was in the end result. The clear glass looked the same at the end... by saying gushing, do you mean the flow starts to wobble? I can see that being the case, but I'm curious why it is a concern?
Thanks for clarifying for me. There is much to learn here and I can see that this is an art and a science in one :D
you're most likely just having issues with channeling.
i have similar issues at times with my naked portafilter where it'll start out alright then i'll get some spritzing and sometimes what i like to call "horribleness" aka gushers.
maybe consider doing a WDT? ive lately starting doing a bit of tapping of the portafilter onto the counter to distribute the grounds better. It seems to help me a bit. I'll dose about 1/3 of the grinds, tap about 4-5 times to even it out, put the other 1/3 in, tap again, then finish it off and tap again. Then i usually nutate lightly and then tamp. Helps a bit.
btw i purchased my naked portafilter from ebay(cheapest i could find) from this seller. http://www.ebay.com/itm/NUOVO-SIMONELLI-ESPRESSO-BOTTOMLESS-NAKED-PORTAFILTER-21-g-BASKET-INSERT-/330786999095?pt=BI_Hot_Beverage_Brewers&hash=item4d04710b37
With clumping the WDT is all but mandatory. However, breaking up clumps is only one of the results. It is afterall the Weiss Distribution Technique. Even with a clump free grind it can still aid in even distribution. Something to at least try and see if you notice a difference.
Looking at your other video, nothing seems out of sorts although i'd personally stop it sooner (again hard to tell not being in person).
