I know this is a dumb question. I have only used entry level home espresso machines that require just 1 brew button. I have always wondered what these buttons each represent..
Am I correct?
I ask because I am trying to master all of the recipies and I wanna make sure I get all of the measurments correct. For example If I wanted to pull 2 double 1.5-2oz shots would I still run water through 16-21g of coffee grounds?

Those are the buttons of an automatic espresso machine, and they are usually programmable, i.e. the operator can influence volumetric brewing by deciding how much hot water is used for a ristretto, single shot, doppio or lungo, for example. Or it might also be a single shot, double shot, two double shots and a café crème.

No harm in asking, not at all! I have several hobbies, some I have been away from for a little while and when I came back to them, there were new references and things I did not understand, causing me to ask what they were. If you don't know something, ask! No one is going to count anyone down for asking, heck there are a lot of people that want to know the same thing but will not ask so all questions are welcome!
As Nobby said, the buttons are programmable so the short answer is that they mean whatever the programmer wanted them to mean. I would read the buttons, at face value, as a short single shot, a normal single shot, a short double shot, a normal double shot and manual.
My machine does not have pictures and the buttons are labeled 1, 2, 3 and 4 thus there isn't even a picture to guide you. I do not use 1 or 3 and I have 2 setup for a normal double shot of two oz. 4 comes default as manual.
Any volumetric machine can be setup the way you want it.
