Today I pulled a shot of 30hr old JBM City + roast on my modded Delonghi EC155. The shot came out a bit quickly, I did not time it. I got a ton of light to medium brown dark crema. There was so much that I had to stop the shot at 1 1/2 oz on a 2 shot before it overflowed.
When I tasted the shot I noticed that it tasted very bitter. I'm confused because the shot came out quick but was over extracted and gave a ton of crema. Anybody have any ideas? Is the crema due to it being such a new roast?
FYI I roasted 1lb in my Behmor P1 (100% heat during the entire roast) setting. 16min roast to C+.

You can get a ton of crema even with a bad shot.... those beans pry need a few days of gassing off, 30hrs may not have been enough. I don't think I've ever had any bean after 1 day rest and liking it, beans need at least a few days. Don't most people with Behmors recommend not doing 1lb at once? See so many post saying to do smaller batches to have more even and controlled roast.

You’re prolly right. I'll let them rest for a few more days. As for the Behmor I haven't read that. I have only read people not getting a hot enough roast at the 1lb setting which is usually a voltage problem. I was able to roast the entire 1lb with time to spare and without adding additional time. I have a dedicated 125V 15A line for it. The roast also looks very even. I'll pull a shot in a day or 2.
