Hi I know this question might of been asked but I am receiving different answers. How many tablespoons of freshly ground espresso per shot of espresso should I use?? Thanks

There is no right answer for that. The amount of ground coffee to put in the filter basket is a function of the size and shape of the basket, the shower screen position in relation to the basket, and other factors. The best way to find out how much to use is by weighting the beans or the ground coffee.

Would be difficult to say how many tablespoons, because the volume of ground coffee varies, depending on how coarse or fine it is ground. I prefer to dose by gram weight instead. 15 to 18 grams per double shot, depending on the capacity of your filter basket.

Agreed with the others....dosing by weight measured in grams or tenths of a gram is the best solution, either ground or pre-grinding.
If you're going to dose by volume, you'll have to sort of eyeball the tamped height of the coffee in relation to your basket, keeping in mind that every roast will have a slightly different volume-by-weight from each other (the darker, the more volume, the lighter, the less volume for the same weight of coffee.)
However, I suspect since you're asking this question you may be new to espresso and relating the "tablespoons" from drip/press instructions?
Based on this book a shot is between 6 to 10 grams of coffee. A Google conversion of gram to teaspoon says that 10 grams of coffee is 2 teaspoons. Since i use a french press this has been how ive always done the process. perfect crema ontop. I run with more of the practical process versus by the tradition/book. I work it a little cuban style too with adding my turbinado to the grounds before adding the water.

The best way to dose consistently, which is a very important thing to do, is to weigh your dose each and every time. This is what I recommend to any newbie.
But if you don't want to do that, there's a rule of thumb method that works fairly well: Fill the filter basket until there's a small heap, so that the basket is full to the rim once you've leveled that heap, then tamp. With enough practice and experience this visual judgement can be pretty accurate (within 0.2 g). And it works for the single shot basket as well as for the double.
However, you might want to try different doses sometimes. In that case there's no way to work without a scale.

That's not crema on top of the coffee during the press & carry over on top of the coffee after pouring into your mugs, but the remnants of the 'coffee bloom' that is liberated by the hot brew temperature water during the brew/steep releasing CO2 from the fresh coffee & gassing out to the surface.

Look at espresso pulls on youtube and you will get an idea of what crema looks like. And you can see it get smaller over time like beer foam in a glass. They call it guinnessing. The espresso pulls on youtube are amazing.
