not on my screen.   All I see is the join date and number of posts.  Probably depends on the browser.

Though I could go to his profile and read up - but regardless of what machine he has ... my points were:

Don't assume your PID temp equals your brew temp (maybe you have the one magic machine that is like that - but I'd be surprised)

It's not difficult to raise your temp a few degrees and try it ... sour usually means not hot enough.

I hope that you know that it is just your choice of settings on this site.  I just tried it and turned off the info, and then back on.

Turned it up to 207F. Sip. Nope. Still doesn't taste right, though now it's less sour. I'm kinda afraid to turn the temp up too high. I swear the thermometer said the PID set at 207F was 200F at the grouphead, but I could be wrong. Can a few degrees off really make that big of a difference? I could try 210F, I guess.

I also tightened the grind a tad, so now it's pulling 2oz at 30 seconds.

This should be a positive result, not negative as your post makes it seem.  You've increased the temp and made an improvement in the taste.  Wasn't that your goal.  If it is still sour, up again.  If not, then play with your other variables.

I liked redbird better as ristretto, maybe dose at 20g, pulling roughly 1.75 oz. of volume in 30-ish seconds.  
I'll suggest to try raising the dose first to get a tighter pull and then if it's still sour bump up the temperature.

I was originally doing 20g pulls, but decided I was using too much coffee. I guess I could try 20g again.

Raise 1-2 degrees more, and again check the temperature out the group.  You could always speak with Jeff at Redbird.

210F now. Not as sour as before, but still sorta sour. Deffinately easier to drink now. I still don't taste any chocolate.

Try a degree up, or down, and vary your grind pull a little.  I am not great at tasting chocolate, but at least you got rid of sour.
