There is no economically easy way to test water temperature unless you make you own Scace-like device. And with a SIlvia there is not much you can do about it. Best test device is your taste buds. Learn the temp surfing method and then experiment. Use one time for a week or so, then change it by two or three seconds and see if you can taste the difference. The only other logical method is PID the thing.

Thanks. Have had my Rancilio for 10 years and thought that the sometimes bitter result was in the beans not with the water temperature.
I will experiment this afternoon with surfing. If I understand it correctly, when the brew light comes on I hit the brew button and let the steam run thru just the porta filter for a set number of seconds to lower the water temperature. I then insert the basket and brew my cup of coffee. Trial and error until I get the results that I would like.

The styrofoam cup method which I have documented on my website is a good way to make sure that the machine is generally operating within tolerable limits, but it is not at all accurate. When the water is released from the group it loses a lot of thermal energy in a hurry. The response time of the thermometer or probe, and the metal of the sensor also throws things off. When you consider that a one degree difference can be tasted in the cup, and a three degree change is quite huge in terms of espresso brewing, it is easy to see that the cup method should no be used t create or verify a benchmark.

Randy yes you are correct that's why I say SHOULD be as close to a styrofoam cup cut shorter pushed all the way against the grouphead with the thermometer hole in it
Scace Erics thermometer are of course what we use but we cannot expect that everybody can afford them right?
let's also consider that a lot of roaster now days are very tune with the exact temperature they espresso should be brew at SOME roasters DON"T so when some customer buy espresso beans they don't even ask that question, not to mention customers which will buy a DB or a T1 and then buy pre-ground coffee or (no offense) beans from wholesale warehouse such as C....... no names so it is our responsability to educate customers and customer to do reseurces, starting with basic testing can at least help troobleshooting or see what is the next step to take
