When the espresso is about mid pour there is a cone of espresso that appears in bottemless portafilters. Sometimes though when i pull the shot on my silvia the cone is huge. Im talking like extending from the whole basket.  I'm using triple baskets, and i think it has something to do with it, but it doesn't always happen. Can't say much about shot since it was in a cappucciono, but tasted alright.

Is the coffee super fresh?  I've seen this with fresh and still quite gassy coffees.  The best diagnostic would be taste, but I don't  think the cone is a terrible flaw in of itself, if it is the taste will reveal it.  Other than super fresh coffee the flow may have been slightly fast around the perimeter of the basket perhaps?

Here is a video of one of my cones, the coffee was very fresh and despite the cone the shot was delicious.

Well the beans weren't super fresh, in fact i was worrying that they were getting old because  it was a mix around 7-12 days, and not perfectly stored because of persistent use. But yeah the cone was like that though larger for most of it. About the size at 13 seconds in, and the shots aren't too fast either around 3.5 oz in 26ish. The flow in the beginning during the beading seems good, no i don' think the flow around the perimeter was fast, because there wasn't a donut effect.  The shots aren't bad, bad not great, and the specific flaw is hard to pick out, the shots characteristics lack some definition.

To me 3.5oz in 26 seconds is a fast shot.  I shoot for 2oz or less in 25 seconds.  Are you temp-surfing when you pull the shot?  My first thought is that the water is too hot.

I agree; sounds like the shot is way too fast.  I can't see how temperature would have anything to do with the size or shape of the cone.

Cheers,

Luca

They're pulling normale triples.  3.5oz in 26 seconds is slightly fast.

It's certainly not full-on "fast".  If the goal were a double, or a triple ristretto, that might make sense.

Generally, though, I don't find the shot quality to be optimum in pulling triples.  Maybe that's just me.

Either way, I do agree that the shot could be slowed a bit.
