Subject: air pot versus thermal pot
 

Hi!  I hear conflicting opinions about whether you should put your coffee (retail shop) in an air pot or a thermal pot.  Some say air pots allow air to get into the coffee, which compromises the quality; others say that it doesn't matter and that since you have to refill airpots sooner, the coffee you serve is fresher, with less waste.  Any opinions?

The "air in the coffee" issue seems to me to be based on ignorance.  How can you pour coffee from a thermal carafe without getting air in the pot to replace it?  And doesn't air get into an airpot only when you pump the coffee out?

It seems more reasonable to me that an airpot is still a thermal, vacuum-insulated device, and puts in only the air in the pot when you pump out a cup.  A regular thermal carafe exposes much more air at the time of pouring.  The air pot probably loses heat faster through the pumping mechanism, but other than that I don't see any deficiencies.  And it has the added benefit of providing an easier pour to the customer, and easier presentation for you the owner.

Thanks, Don, for your response.  I was referring to the Luxus type of thermal pots that coffee is brewed into.  Then it would be either poured by the employee or the customer into a cup, depending on how you want to do it.  I'm not sure if you and I were talking about the same 'thermal pot'.  But I'm still not convinced that it would be better.  A couple of people have said that it is, and I see a lot of Luxus thermal pots in cafes now, so I wondered if it really did make a difference.
