I used to own a small coffee truck. At home I use a moka pot and not much else. I'm thinking of picking up a nemox junior because of it's dirt cheapness and because I miss pulling the very (very) occasional shot. How often would I have to use the machine to keep it from getting funky? I tried searching for the answer but I didn't come up with much.

It varies depends on your environment and water source...
Best thing to do is clean it every two or three weeks and based on your inspection you can increase the interval.
Also, stagnant water tastes different, if not bad from fresh water, so you decide how fresh you want the water to be in your coffee. Personally if the water in my reservoir is more than a week old I generally empty and refill it before pulling my shots.
