Dean - we may have different definitions of microfoam. My ideal microfoam is: super tiny bubbles distributed evenly throughout all of the milk, not sitting on top shouldn't form stiff peaks, it should look like wet paint and spread kind of like wet paint in that the way you pour will create art of some kind, like white liquid shapes being poured into the darker base of the milk which has integrated with the coffee in the early part of the pour
If you have foam sitting on top, that to me is just regular foam, in that it's airier than the steamed milk portion which has settled to the bottom along with the coffee. Some like that type of drink, but I prefer my microfoam integrated fully with the entire pitcher of milk.
FYI I keep my pitcher in the freezer while the machine is heating up (along with the portafilter locked into the machine) and when it's ready to go after about half an hour I take out the pitcher, pour the milk in (which has remained in the refrigerator) and am steaming within a minute (basically after I've ground, tamped and drawn the shot).
Well, I am darn near blind up close and I never have my glasses on when I am steaming milk, so I will put my glasses on and see what I have next time. I do know that I have ALWAYS had a lighter frothier foam on top... but I like for that foam to have very small air bubbles and be very light and fluffy. But I don't want gobs of it and I don't want it so thick it will pour into a peak. I would say most of the milk I call good looks like wet paint.... but that is without the benefit of my glasses. I will put my glasses on and give you another report.
Edit: BTW, my foam looks more like the foam on the right. The one on the left has large bubbles... looks like soap suds a little to me.
