I was thinking about ordering something like this and putting me a pump and 5 gallon water bottles in the bottom....

See a cart I like on Amazon

Anyone else done something like this?

Will the Vetrano 2B fit?  It's only 17 3/4 inches deep.

I haven't done it, but I've been thinking about it.  Been looking at this one:

I had to find a solution after I moved into a place that did not have enough clearance under the cabinets. I was looking at all kinds of carts and tables, etc. Here are a couple observations:

  1. I needed something sturdy. I put a fair amount of torque on the machine while locking in the PF and pulling the handle on the doser. If the table/cart is not sturdy, it will wiggle around which is a distraction for me.
  2. I wanted something deeper than 18 inches. I like having a spot in front of the machine to prep and tamp. 23 inches was minimum for me, 25-30 better.
  3. I bought a table that was not quite high enough. I think 35 inches high is minimum. The one you're linking to is fine in that regard.
