Subject: Espresso Machine not pulling properly..............
 

Hello Everybody! Im head barista at a coffee shop and our Espresso Machine is not pulling properly. We had it serviced a few weeks ago. The shot is thinner than it should be and the portafilter still has a layer of water in it so the puck does not come out properly. Ive messed with the grind but even when the shot is at the correct time, there is still a layer of water. We have hard water up here and Im thinking thats the problem and was curious of what all of your thoughts were.

Water happens.
If you are getting great flavor then don't give the water a second thought.

Adjust the grinder for max flavor and enjoy the espresso

Use a standard dose of 16 to 18g of coffee in a double basket yielding 1.5 to 2.5 fl oz of espresso in 25 seconds then adjust for max flavor from there:-)
