Also, last night I tried the pstat at different setting and nothing helped. And why would my settings change so dramatically from one day to the next?  That is why I don't think changing my pstat is the fix.

I think I fixed it!  I had one of those $9 Walmart electric timers plugged into the machine.  This was the only variable I did not consider.  By removing it, everything seems to be working fine!  Pulled some great shots this morning.  

Thanks for all your help. I'm still considering selling it because I learned a good lesson about temp control and want a dual boiler.

If it was not passing the correct voltage anymore than that would probably make the machine act differently.  I am sure a person with more knowledge of electricity will explain it better than I can.
